Curious on this too, at what point does an OR outperform the SR5?

At the point that you high center the SR5 on something and wish you had that extra inch of ground clearance the OR has. ;)
Haha, at least half of which comes from the slightly larger tire

*all* of it comes from a larger tire(*), a lift won't change the distance between the rear pumpkin and mother earth.

(*) unless you add portals
One has to wonder how the OR has 1” more clearance from a tire that is 0.5” larger in radius!

I have no idea how Toyota measures ground clearance...

There is 1.05" difference in radius between the SR5 245/70R17 and OR 265/70R18 tires. That is the ground clearance difference as @shine stated.

Is that the gap that used to be covered up by the air dam? In another thread people were worried about rocks getting thrown up into there damaging the intercooler etc.
That’s the one. It’s about 2”. I plan to fabricate a piece if no one makes one soon. Considering a few of them models come with that gap from the factory, I’m thinking it’s a nice-to-have vs a must.

All the TRD models (OR, ORP, PRO, Trail) have stronger differentials and CV joints than the non TRD 4Runners AND the new LandCruiser.
Then of course you have the different shocks/springs and rear locker.
re. clearances, the bigger tyre/wheel package increases clearance under the pumpkins, but the higher body clearance due to the longer shocks/springs increases the breakover clearance, as well as improving approach and departure angles.

This youtuber explains the beefier suspenions in his LC review:

Good tires, decent ground clearance, and a 2-speed transfer case covers probably 95%+ of consumers' 4WD needs, for those that ever even use 4WD. The rest is primarily useful (and certainly only necessary for) very technical off-roading, but you're seeing massive marketing budgets push all the extra gear and trims because the margins are absolutely excellent. It's lifestyle marketing, and unfortunately it's taken over the whole off-roading industry. That's why there's such a big "tax" on anything related these days.

I'd love a statistic on what percentage of new PT4WD vehicles sold have ever engaged 4Lo in their first 5 years of ownership!

This is all to say, if you don't already know you need an inch more of ground clearance, lockers, beefier diffs, etc... you most certainly don't and will be very happy with the capability of your future SR5. Just put some decent tires on it.
