So question. What settings do I need to change to prevent my truck from slamming on the brakes and alarming when I’m backing up with a bike rack attached to the hitch mount?!?! It’s driving me mad.

Using your multi-informational screen (center of gauge cluster), go to settings and turn off PKSB (Parking Support Brake). This will stop the braking. You will still get an alarm but the brakes will not be applied. You can also turn off the alarm, but I don't turn it off. NOTE: The PKSB will remain OFF until you turn it back on, even if you restart the truck.

Also, the 4R will tell you every single time you start it that the the PKSB is disabled requiring you to press Enter to cancel the message on the screen. No way around this, even with Carista.

Really hope we get a workaround for this as well.
