This video features Dongar's parking mode adapter & 5-pin pigtail which isn't due for release until around late July.

I just don't understand why traditional manufactures are not allowing the plethora of on-board cameras to be recorded and used as dashcams. At least with these new models there is a built in option for power to an aftermarket one. The OEM one at $500 is just insane.

Your answer to why is in your question.

Is there a built-in option to power an aftermarket dash cam? Cause what's depicted in the video isn't built-in to me, but a cool aftermarket mod nonetheless.

Like Shine's example using the Subaru, here is something that several users have identified as a solution: power cable for FitBox camera to toyota connector
IMHO every aftermarket camera targeting use on 6G4R should come with a similar connector option - SO much easier than routing a wire to a fuse box and having a piggyback fuse prevent closing the fuse box cover. The connector is right there where you need it. And if you get a Toyota OEM dash cam, it comes with the connector pre-wired.
