I have a 2026 Toyota 4Runner TRD Off-Road with the factory 2.5-inch OEM lift and the stock 18-inch wheels. I’m looking to upgrade the tires, but I don’t want any additional wheel offset or poke—I want to keep the factory wheels and have the tires sit as close to stock as possible.

I really like the Mickey Thompson Baja Boss A/Ts. If I were to go with those, what’s the largest tire size I can run on the factory 18-inch rims while keeping the stock offset? Would I need any trimming or other modifications to avoid rubbing?

Don't forget the size limit of the spare tire underneath, if you care.

Stock offset (+55) will allow you to maximize tire size.
I have 285/75R18 Toyo A/T III (34.8" - larger diameter than A/T III in 35x12.5 which are actually 34.5" diameter) on the TRD flat black option wheels (+45) - even with just a 1.25" level kit, no rub with removal of crash plate and bending up air dam tab. Had those tires on +20 TRD PRO wheels and just barely touches in the front in reverse at close to full lock. And just barely contacts TRD OR fender on rear at full articulation. +45 eliminated those two issues.
And those conditions are unchanged with the 2.5" TRD Lift kit installed 2 weeks ago. I'm going to trim off that tab and push back the felt a bit for a bit more clearance..
Of course these tires will NOT fit in the spare tire spot so I carry a spare in the cargo area for off-roading.
Bottom line: 285/75 will fit - with little room to spare.
The Baja Boss AT 18" does not come in 285/75, but does come in 295/70 (34.5") I believe these will fit even with the 10 mm extra width on your +55. And might be max for that tire on TRD OR with stock +55.
(I have not commented on the headlines suggesting that a much smaller tire 285/70R17 (32.7" - virtually the same diameter as TRD OR/PRO/TH stock) is the largest that can fit on SR5 - since I do not have an SR5 I don't really know but.... seems like a much bigger tire should fit, based on my experience).

What do you think is the max size I could go with no trimming or no modification except for the fact that I took my front air dam out. 295/70 ? I should also note that I have the upgraded wheels that are all black from factory (~$1350 option if that helps). I don’t know if it has a different offset.

Also, I saw a video on a Tacoma (at a dealership) with the same upgraded wheels where they fit the 285/75s with the 2.5-inch factory lift so it may work. Thoughts?

Also, for reference is a video from Ed Martin Toyota with the 2.5" TRD lift and 35" (34.8") tires (285/75 R18's) on stock Trailhunter wheels and there is some rubbing at full lock.

Yes, as I tried to say, I think the 295/70R18 Baja Boss will fit with the +55 stock wheels (or +45 TRD black option wheels).
And I know the 285/75R18 fit (barely) with +45 with 1.25" level or 2.5" lift.
I think the rub with this tire in the Ed Martin video above is because of the +20 offset TH wheels.

Also, From my experience the 2.5" TRD lift makes virtually no difference (vs 1.25" level) in the front wheel clearance to the front body area (air dam tab/felt/edge of body panel - see photo with drive tire turned right and just barely not touching that spot - after lift installed (sorry - don't have a closeup):

I would say you are 100% correct. The TH offset is the biggest factor in that video.
