No performance issues, and I ran the same size (275/70/17) on stock wheels with no lift at first. There is zero rub and the Wildpeak tires run smooth. I purchased and had them installed at Discount Tire.
This is why I love 4cyl turbos. I have something similar on my MK7 GTI along with an intake and some other goodies. The HP increase per dollar is fantastic.

I did what you did because there weren't a lot of options out yet. I think for now a rear air bag set up would be the best and then reevaluate as more options come available.
What I did to get rid of the donut. Purchased a used Tacoma wheel on eBay for $100, even came with TPMS and center cap. Then got a low priced AT tire "Rocky Mountain" and I am in for around $250.
