I cannot say I have not had the same idea. I am going to go with a Stanley French press and a small 12v kettle and see how it goes. but I have not rulled out to upgrading to a keurig.

I like how well that seems to fit there. I have one of these, https://www.amazon.com/dp/B0B3G5Z7DR? , in my cookbox when camping. I especially like that it has a stainless carafe so no glass to break. Fills our two coffee mugs nicely. Too bad they limit the AC power to 400 Watts while driving. It'd be nice to be able to brew a pot without stopping .
